RECIPE: Lemon Bars🍋✨

My mom has been making these since I was little-bitty.

They’re from a teeny old book she bought from a bed & breakfast my parents stayed at the night before they picked me up from summer camp.

INGREDIENTS:

Crust:

  • 1 cup sweet butter, softened

  • 1/2 cup powdered sugar

  • 2 cups flour

 

Filling:

  • 4 eggs, lightly beaten

  • 1 1/2 cups sugar

  • 1/2 teaspoon baking powder

  • 1/4 cup flour

  • 1/4 cup fresh lemon juice 

INSTRUCTIONS:

Make Crust First:

Preheat oven to 350 degrees. Cream butter and sugar. Add flour and mix well. Pat into a 9” x 13” pan. Bake for 15-20 minutes or until golden.

Make Filling Second:

Combine all ingredients and pour over hot crust. Return to oven and bake 20-25 minutes. Sprinkle top with powdered sugar while still warm and cut into small squares as they are very rich.
